Avocado spaghetti

I love pasta. Despite going gluten free (primarily) and processed-free (primarily), I really miss pasta. So I decided to get a fix šŸ™‚

This particular spaghetti is made from amaranth and rice- and I just bought it through an online organic shop but I notice that our local Foodland has similar gluten free varieties. Whilst it was cooking I thought it was going to be a total disaster because of the incredible rice content leaking out of it, but once rinsed and tossed through the avocado dressing, it was really lovely! This seriously is just a base guacamole tossed through and it is amazing what lovely, fresh, zingy flavour it gives as a creamy pasta dressing. I can’t believe I’ve not done this before now!

2 avocados mashed

juice of 2 lemons

1 large garlic clove, minced,

salt and pepper

chilli (optional)


Blend the avocado dressing together and toss through the cooked spaghetti. It really is that simple. We tossed rocket, fresh basil and bean shoots through ours, and for the boys:



They had organic corn and basil in the mix also. Delicious!

  1. Tried it tonight with spelt pasta and lots of shredded & blanched kale, red capsicum, cherry tomatoes, grated zucchini and roasted almonds and everyone loved it, even the little ones! Great, great recipe – thank you!
