When Dave came home today after 5 hours on the bike in 38 degrees I thought protein balls might help (that was after a quick cold frozen fruit and cucumber smoothie!). I am loving the way my thinking about food has changed. I am enjoying food so much more these days, but it is more than that. Rather than a quick grab for a packet of chips or the like from the pantry, my thinking now turns to “What does the body need and how can I make it?”. It’s really not hard once you’ve done the work to grasp the concepts and have the stock on hand. These took under 5 minutes.
1 cup almonds
10 medjool dates, pitted
1/4 cup sunflower seeds
1/4 cup pepitas
2 T chia seeds
1 1/2 T protein powder
1 T raw cacao (or carob powder)
2 T coconut oil
I didn’t measure any of that, but I tried to pay attention to what I was putting in there incase this ended up being blogged 🙂 Mix it up – whatever nuts, whatever seeds, some flavour and sweetener (being the dates). These give energy, protein and multiple counts of goodness! As it turned out, it was a perfect mix and rounded flavour.
Blend in a food processor, roll into balls and refridgerate. And enjoy the burst they give for the 3 o’clock low!
