Broccoli and almond stir fry with ginger

1 leek, chopped

2 cups broccoli florets

100g snow peas

1/2 cup almonds

2 garlic cloves, crushed

1 knob of ginger, finely chopped

2 T soy sauce

1 T agave nectar

2 tsp sesame oil

Saute the leek with garlic and ginger. Add in the almonds, soy sauce and sesame oil. Add in the broccoli and stir fry only until it slightly changes colour to become even more vibrant, then turn of the heat and toss the snow peas through.

This is because people overwhelmingly overcook broccoli and snow peas. They are MUCH better warmed but not cooked and soggy. Believe me!

  1. i love the idea of adding almonds to stir fry!

    • Thanks Sheila. We used to go to a Vietnamese restaurant that had an Almond Nut stir fry with dry roasted almonds, and have been doing it ever since. So yummy!
