So THIS is a sometimes food. But in terms of how sugar laden fudge can be, this is pretty good. If you’re going to eat fudge, eat this one 😛
I was trying to make peanut butter. No matter what, the kids don’t like it. I’m sure it is because they want it as sweet as the commercial one they had been having but I’m resisting that as a daily option.
So I decided to morph it into a fudge for the Easter Egg fillings as a treat.
All that happens with peanuts is roasting them (bake in oven at 180 degrees C until they start to change colour) and blending them (food processor for at least 5 minutes. Keep going forever until it becomes smooth). This is presuming you have raw peanuts. Otherwise you could buy roasted and unsalted, and then blend them.
For the fudge:
Prepare a dish first. I covered a small glass dish with cling wrap. You could just spray it with a spray oil or cover it in baking paper as alternatives.
1/2 cup roasted peanuts, blended
1/3 cup coconut oil (soft/melted but not hot)
1/3 cup brown rice syrup (or agave nectar)
1 tsp vanilla extract
Blend the fudge mixture…it will be runny…and pour into the dish for setting in the fridge. Once solidified, cut up into squares and enjoy 🙂
