Lemon Coriander Hummous

Lemon coriander hummus

400 g chick peas

1 garlic glove

1 cup coriander (cilantro)

1 T lemon rind

1/4 cup lemon juice

3 T oil (I used rice bran, for the mellow flavour)

1/4 cup water

1 T tahini

Blend and refrigerate 🙂

*Truth be told, I always find homemade hummous a little “punchy”. My husband suggested roasting the garlic first which sounds AWESOME so next time around, I’ll let you know how I go! I also thing mashing in an avocado would add depth and creaminess to it, if you are going to eat it in one sitting, with guests, for example. It wouldn’t keep well however with avocado in it.

Using lime instead of lemon would also be another creative alternative. Soo many hummous options!
