I was on a search for breakfast options – and really, I just want something tasty, light and easy that I can grab as I walk out the door. So I thought fritters would be a good option? Having said that, they are in the “lunch” category because really this could be where they belong, and it’s what I made them for today!
Being used to egg as a binding agent, if you use alternatives they are slightly freaky by their gelatinous nature – but having said that, these are mind bogglingly tasty and I ate too many of them before I took the photo 🙂
1-11/2 cups corn kernels (or 3 cobs of corn)
2 grated zucchinis (less, if they are huge)
1/2 finely chopped spanish onion
1 T chia seed (or flax seed), soaked so that it becomes gelatinous (this is the egg replacer)
1/2 cup gluten free flour (you can use whatever option you are interested in here. Mine is a maize/tapioca/potato mix.
3 T soda water
handful chopped parsley (or coriander would be sensational)
1 tsp cumin
1/2 tsp chilli flakes
salt and pepper
Literally: mix it all together. And lightly fry them! Delish 🙂
