So I know I’m a bit passionate about food – and more so now than ever. And I’m totally loving myself at the moment for making myself this ice cream :). If you do anything before you die, try this. Death by ice cream. Sounds good, right? But it can’t be bad, there is no refined sugar, no dairy, no animal products, no… well, we’re back to plant based yumminess. That, and roasted macadamias. They are totally divine! (I hope you can eat nuts).
2 tins coconut cream
2 T Agave nectar
1 T coconut oil
1 tsp vanilla extract
3/4 cup chopped, roasted macadamias
Push the passionfruit through a sieve and reserve the seeds if you like them. Mix the pulp with the coconut cream, oil, vanilla and nectar and blend in a blender. If you like seeds in your ice cream, return these with the macadamias into the mix (post-blending) and pop into the ice cream maker.
(If you don’t have an ice cream maker, just freeze in a container. Note that the seeds will sink to the bottom and the nuts will float so you will need to stir it if you would like them mixed through. Otherwise it’s a great effect in little glasses for serving!)
